Or, just planning a great cocktail party? The Chocolate Martini is the signature drink to feature at your bash! There are many ways to make a chocolate martini. Our favorite recipe features a sweeter taste, so we use vanilla flavored vodka. Slice the garlic cloves into three or four long strips, and with a sharp knife, make 1-inch deep slits into the lamb spaced fairly evenly apart. Place a piece of garlic in each slit. Chop the herbs and mix with the olive oil and a little salt and pepper. Rub the herb mixture over the outer surface of the lamb. Place in a roaster pan, and cook for 30 minutes. Reduce the heat to 325 degrees, and cook an additional 2 to 2 1/2 hours, or between 20 to 30 minutes a pound depending on desired doneness. Salmon is a tasty and trendy choice for dinner parties ~ popular because of it's health benefits, salmon has become THE fish to serve your guests. Deliciously simple to make, this recipe is the perfect choice for entertaining since you will have lots of time to spend with your guests! We have served this dish on many occassions and have never failed to receive rave revues. Prepare in advance, cover and leave in the refrigerator until you are ready to cook! Serve with rice pilaf and asparagus and you are good to go! Guests will LOVE this one!.&lt;br /&gt;&lt;br /&gt;Ingredients:&lt;br /&gt;4 salmon filets, approxinately 4 oz each&lt;br /&gt;8 oz. basil pesto&lt;br /&gt;4 Tbsp. olive oil&lt;br /&gt;2 Plum Tomatoes, sliced thin&lt;br /&gt;Romano Cheese, grated&lt;br /&gt;&lt;br /&gt;Preparation:&lt;br /&gt;Take 4 individual casserole dishes (anything kind you can put in the oven). Put approximately 2 Tablespoons of Basil Pesto into each dish. Add 1 Tablespoon of olive oil to each dish and mix into the pesto until smooth. Pleace one salmon filet into each dish. Put 2-3 slices of tomato on each filet. Top with a sprinkle of romano cheese. Place your casserole dishes on top of a cookie sheet and Bake in 350 degree oven 15-20 minutes until pesto bubbles and salmon is opaque and cooked through. Use sliced roasted red peppers to top filets instead of tomatoes for a variation. Also, works with tuna or swordfish! We tried it ~ and WOW ~ it's now a favorite of ours at The Perfect Party Press! Try it for your Super Bowl Party. It's sure to be a hit ~ BAM!&lt;br /&gt;&lt;br /&gt;Ingredients:&lt;br /&gt;8 hardboiled eggs, peeled and cut in 1/2 lengthwise, yolks removed and reserved separately&lt;br /&gt;1/4 cup mayonnaise, preferably homemade&lt;br /&gt;1 tablespoon extra-virgin olive oil&lt;br /&gt;2 tablespoons chopped black or green olives&lt;br /&gt;1 tablespoon minced red onion&lt;br /&gt;1 tablespoon chopped pimento, plus thin strips for garnish, if desired&lt;br /&gt;2 teaspoons minced parsley&lt;br /&gt;1 teaspoon nonpareil capers, drained&lt;br /&gt;1/2 teaspoon white wine vinegar&lt;br /&gt;1/4 teaspoon salt&lt;br /&gt;1/4 teaspoon hot paprika, plus more for sprinkling on top for garnish&lt;br /&gt;3 tablespoons drained and flaked light tuna packed in olive oil, preferably Italian&lt;br /&gt;&lt;br /&gt;Directions:&lt;br /&gt;In a small mixing bowl mash the egg yolks with the back of a fork. Add the mayonnaise and olive oil and mix until smooth. Add the olives, onion, pimento, parsley, capers, vinegar, salt and hot paprika and mix well to combine. Add the flaked tuna and fold gently to combine, trying to keep the tuna flakes intact. Taste and adjust the seasoning if necessary. Wash shells; place each clam in deep half of shell. Discard remaining clam shell halves. Sprinkle clams with a little salt. Champagne&lt;br /&gt;&lt;br /&gt;In a tall flute glass, pour the orange juice in first, then the champagne. The champagne with its alcohol is thicker and will mix down the orange juice. Do not stir or you will lose the bubbles! Garnish with an orange slice, cut in half ( a whole orange slice is too big for a champagne flute).&lt;br /&gt;&lt;br /&gt;We usually set up a small bar area for any brunch. You can set out your flutes and mixings, as well as your orange slices in an attractive plate. People LOVE Hash Browns and this Brunch casserole version is perfect.  It's &lt;strong&gt;easy&lt;/strong&gt; to make and everyone will rave about it!&lt;br /&gt;&lt;br /&gt;Ingredients:&lt;br /&gt;&lt;br /&gt;1 2-pound package frozen hash brown potatoes, unthawed&lt;br /&gt;1 10 3/4 ounce can cream of celery soup&lt;br /&gt;3 packed cups grated sharp cheddar cheese (12 ounces)&lt;br /&gt;1 cup sour cream&lt;br /&gt;1 cup finely chopped onion&lt;br /&gt;1 6-ounce can french fried onions&lt;br /&gt;&lt;br /&gt;Preheat oven to 350 degrees.  Combine first 5 ingredients in large bowl.  Transfer to 13x9x2 inch glass baking dish.  Bake until top is slightly golden, about 1 hour 10 minutes.  Sprinkle with the french fried onions.  Bake 5 more minutes until golden brown.&lt;br /&gt;&lt;br /&gt;approximately 12 servings&lt;br /&gt;&lt;br /&gt;p.s.  We have prepared this casserole the evening before a brunch and added the french fried onion topping before cooking and had great results!  Do whatever is easiest! Cut each clice of bacon into 4 pieces. Wrap 1 bacon slice around each scallop. Broil 8 minutes or until bacon is crisp and scallops are done. Baste occassionally with reserved marinade.
